Oh, potatoes!

Scalloped, with a smidge of bacon.


This is year two of them being in our holiday food line up. They will be staying.

A beautiful recipe – The only changes I made are some chopped up, crispy bacon in with the onions (say five to six slices, and if you happen to have pepper bacon, use it). And I used just half ‘n half instead of the combo of cream and milk. Before I put it in the oven, I added some cheddar and roughly stirred it in and then put some more on top. Another fun help – I love my food processor – we sliced them the night before and put them in a salted water. Brilliant!! And just put them in a strainer while all the good stuff is sauteing. Awesomeness!

So there you have it. There’s almost no leftovers from today’s Christmas lunch at the Grandparents. It may be worth a trip down to the store for more potatoes … we have everything else … brilliant idea.
